Why are craisins so good? Something about those wrinkly little cranberries is irresistible. I love eating them in trail mix with raw almonds and dark chocolate, in oatmeal cookies, or just on their own. Craisins, just like their non-dried counterparts, are a good source of vitamin C and antioxidants. Though they sometimes contain added sugar to increase the sweetness, they’re a better alternative to fruit snacks or gummies while packing the same fruity sweetness we crave.
Craisins take center stage in this cranberry apple chicken salad. I created this chicken salad recipe a few years ago after eating at one of my favorite restaurants in Hallowell. The Liberal Cup has a delicious chicken salad on the menu with mango chutney, walnuts and cilantro. I order the chicken salad wrap almost every time I go in for lunch or dinner. It’s definitely an indulgence though, with all the mayo making it rich and creamy. I wanted to create a similar chicken salad at home packed with texture and sweetness, just like the walnuts and mango added to the Cup’s version, but lighter on the mayo.
You’ll notice that my chicken salad only has one tablespoon of mayo in the entire recipe. Using Dijon mustard instead of extra mayo adds flavor without fat. Try it out! You won’t miss the mayo or the extra calories, I promise.
Cranberry Apple Chicken Salad
Makes about 2 cups
1 boneless skinless chicken breast, cooked
1/2 medium Granny Smith apple
1 stalk celery
1/4 cup craisins
2 tbsp sliced almonds
1 tbsp mayo
1 1/2 tbsp Dijon mustard
- Chop cooked chicken in a food processor, blender or by hand. Place in a medium bowl.
- Dice apple and celery into small pieces. Add to chicken.
- Add craisins and almonds to chicken mixture.
- Add mayo and Dijon mustard. Stir to combine.
Enjoy this chicken salad on bread, toast, an English muffin (my favorite) or scoop it on top of a bed of lettuce and drizzle with honey mustard dressing for a delicious salad. Save the other half of the Granny Smith apple to enjoy with your chicken salad sandwich for a complete and filling meal.
