Mac and cheese is one of those dishes that everyone loves. It is the definition of comfort food. Traditional homemade macaroni and cheese can be quite a task to prepare though, so it's easy to fall back on those less than stellar supermarket finds... Until now.
Try this recipe and you'll never go back to the stuff in the box with powdered cheese. It's simple and comes out thick and creamy every time with minimal effort. It's homemade mac and cheese the easy way. The best part is you'll only need to use one pan, so less dishes to wash after.
One Pot Mac & Cheese
2 1/2 cups skim milk
2 cups small pasta (shells work best)
1 cup shredded sharp cheddar cheese
1/4 cup shredded Parmesan cheese
1 tsp salt
1/2 tsp Dijon mustard
Pepper to taste
- In a small pot combine skim milk and pasta over medium-high heat.
- Bring to a simmer, stirring frequently for 5 minutes. Be sure the milk does not boil.
- Reduce heat to low and cover. Let cook on low for 20 minutes, stirring frequently. Do not let the milk boil.
- When pasta is completely cooked there should still be some milk left that was not absorbed. Remove from heat and stir in cheddar cheese, Parmesan cheese, salt, mustard and pepper until cheese is melted and all ingredients are incorporated.
