Fresh salsa for Labor Day weekend

Don't go empty handed to your Labor Day celebrations! Pitch in on your friend's cookout by making a delicious party dish. Whether your expertise is baking or grilling, you'll be able to find something to bring along. 

Or maybe you're just not that great in the kitchen. I've got a recipe that requires no cooking. Just chopping. It's a fresh chopped salsa that will taste way better than any salsa you've had out of a jar! So here is what you need: 

  • 2-3 tomatoes, chopped
  • 1 cucumber, diced
  • 1 green pepper, diced
  • Corn from 2 cobs (about 1 can drained or 2 cups frozen) 
  • 1 red onion, diced
  • 1 can black beans (or kidney beans, black eyed peas, etc.) 
  • 1 lemon
  • 1 lime
  • 1/4 cup cilantro 

Take all the veggies, chop them up, and throw them into a bowl. Drain the beans, throw them in. Chop the cilantro and sprinkle in the bowl. You're almost done! Squeeze the fresh juice from the lemon and lime over the salsa. Now season with salt and pepper (maybe a little chili powder too!) and you're done!

Don't forget the chips!
