Tasty Thursday: 2 Protein Packed Recipes

Why is Protein Important?

According to Dummies.com, the name protein name comes from the Greek word protos, which means “first.” Your body uses proteins in your diet to build new cells, maintain tissues, and synthesize new proteins that make it possible for you to perform basic bodily functions.

So, to go on doing your normal day-to-day routine, be sure to pack some protein into your meals! Here are two awesome and different recipes you should try: 

Two ingredient banana pancakes

  • 1 large banana
  • 2 eggs

Mash banana in a bowl. Crack eggs and mix with banana. Spray griddle with non-stick spray. Pour batter, flip, and enjoy!

Mini turkey meatloaves

  • Approx. 1 1/2 lb. ground turkey
  • 2 egg whites
  • 1 cup quick cooking oats
  • 1/2 tsp ground cumin
  • 1/2 tsp dried thyme
  • 2 tsp dry yellow mustard
  • 2 tsp black pepper
  • 2 tsp chipotle pepper spice
  • 1 tsp salt
  • 1 small onion, finely chopped
  • 1 green pepper, finely chopped
  • 2 cloves of garlic, finely chopped

Preheat oven to 375 degrees. Spray muffin pan with canola or olive oil. Sauté chopped pepper, onion, and garlic in one pan. Mix all your ingredients together in one large bowl. Roll the mixture into balls and place in muffin pan. Muffins should be about the size of a racquetball. Bake for 40 minutes. Makes 12 muffins. 

I made a bunch of the mini meatloaves and brought them with me when I went skiing this weekend. My mom was so intrigued about what I was eating and liked the taste too. So I thought I would share it with everyone. They are easy to make ahead and pack for lunches all week!
