To be honest, I had no idea what dilly beans were until I met Linda, my soon to be mother-in-law. I'm a huge pickle fan. In fact, when I worked at the Texas Roadhouse, myself and many other employees would take "pickle shots" after our pickle containers were empty. Yes, we would take the juice and shoot them on busy nights. If you ever go there and smell dill on someone's breath, you'll know what happened. All that is to say that when I heard about dilly beans, I got very excited. Today I got a copy of Cooking Light in the mail and they happened to have a recipe for quick pickled dilly green beans. So in honor of my soon to be mother-in-law and the fact that I just love dill, I decided to let you in on this lovely tasty treat! They are refreshing, healthy and oh so tart!
The ingredients are quite simple and pretty much anyone can do it:
- 1/4 cup chopped fresh dill
- 1/2 pound green beans, trimmed
- 1 cup white wine vinegar
- 1 cup water
- 2 teaspoons sugar
- 2 teaspoons salt
- 2 teaspoons pickling spice
- 1 garlic clove, peeled
All you have to do is combine the green beans and dill together in one bowl and then bring the other ingredients to a boil on the stove in a separate pan. Take the boiled mixture and pour it over the beans and dill. Let it stand for two hours and serve with a slotted spoon! It's that simple, and definitely a taste explosion of happiness in your mouth.
