Tasty Thursday: Espresso Brownies

Today's Tasty Thursday combines my love of chocolate and coffee. I love desserts, and have been trying to cut back on them since I am getting married in two months. I've been failing miserably. Oh well! I was looking at the Food Network online and looking for fun tasty treats, and stumbled across this doozy. How can you not drool when you look at these? I don't think it's possible. So here they are. A lovely end to the day...combine it with a scoop of ice cream and you've got something special going on!

The ingredients are the following:

  • Nonstick vegetable oil cooking spray
  • 1/3 cup plus 2 tablespoons water
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 2 tablespoons plus 2 teaspoons espresso powder
  • 1 (19.8-ounce) box brownie mix
  • 3/4 cup semisweet chocolate chips
  • 1 teaspoon vanilla extract
  • 1 1/2 cups powdered sugar
  • 1 tablespoon unsalted butter, room temperature

The whole recipe may seem like a lot, but it's not difficult...I promise! Essentially, all you have to do is prepare the brownies the way the package says (using the 1/3 cup water, 1/3 cup vegetable oil, 2 eggs, brownie mix, espresso powder and chocolate chips) and bake them until the knife comes out clean. I suggest you preheat the oven to 350 degrees. I love the fact that this recipe adds chocolate chips to the equation. You can't get enough chocolate. After the brownies cool off, (or while they are) take the remaining ingredients and add them in a separate bowl to create an icing, a yummy, tasty, coffee icing. MMMMMM. Put the icing over the brownies and wait until the icing sets. After that, slice and serve! It's that simple!
